Cheese, Chorizo and Crema Product & Recipe FAQ

Where can I purchase V&V Supremo® products?

Our products can be found in small independent grocery stores, large retail stores and all major supermarkets across the country. If your grocer doesn’t carry one of our products please request that they do so.

Can V&V Supremo® products be frozen?

The only products that can be frozen are: Chihuahua® cheese, Oaxaca cheese and Chorizo. For Chihuahua® we recommend freezing up to 3 months before opening. For chorizo, freeze in the original package for up to 2 months beyond the “sell-by” date. The other cheeses and sour creams should never be frozen, as freezing will greatly impair their quality.

Can I consume your products after the date on the package?

Our unopened products can be consumed for three days after the “sell-by” date. It should be noted that there are no preservatives added to our all-natural dairy products.

How can your dairy products last as long as they do without preservatives?

Our state-of-the-art quality control procedures are responsible for our products’ “sell-by” dates.

What type of milk is your cheese made from?

All of our cheese is made from pasteurized,  grade “A” whole cows’ milk from Midwestern farms, with no added artificial hormones.

How is Chihuahua® cheese used?

Chihuahua® is a natural melting cheese, that can be shredded and used for any application where a melting cheese is called for. Examples include quesadillas, pizzas, grilled cheese sandwiches, enchiladas, suizas, etc.

How do I make a cheese dip from Chihuahua® like I get at my favorite Mexican restaurant?

To create a cheese dip or sauce we recommend simply heating one cup of V&V Supremo® Crema Supremo® sour cream with one and a half cups of shredded Chihuahua® cheese. The cheese should be added to the sour cream 1/3 at a time, and whisked over medium heat constantly until fully melted. (In case our sour cream is not available, heavy or whipping cream can be substituted. We do not recommend using other brands of sour cream, as there is a risk of a curdling reaction due to additives that may be present.) It should be noted that the procedure above will result in a delicious and natural cheese dip without the processed ingredients, such as added binders and stabilizers, that are often used for this preparation.

How is Queso Fresco used?

Our queso fresco is a fresh cheese that traditionally is simply cut and consumed as an accompaniment to a meal. It is often crumbled over beans, soups, salads, tacos, and tostadas, or used as a filling for enchiladas. Other applications include cutting it into cubes for salads, casseroles and appetizer trays.

Is your cheese pasteurized?

All of our cheeses are made from pasteurized milk, but the cheeses themselves do not go through the pasteurization process.

I am a vegetarian who eats dairy products-what type of enzyme is used in your cheese?

It is a microbial enzyme that does not contain animal by-products.

Should the casing on V&V Supremo® Chorizo be removed?

Yes, the casing is not edible, and should be removed. The only exception to this rule, is if you have purchased our Chihuahua® Chorizo, sold by the pound in the grocer’s deli section. This product comes in smaller links, and has a natural casing that is fully edible.

How do I cook the chorizo?

Remove the plastic casing, and place the chorizo in a skillet over medium heat. Break up the meat with a spoon and stir as it cooks. Continue this procedure until the chorizo is totally crumbled and fully cooked. (Approximately 10-12 minutes)

Does V&V Supremo® Chorizo contain monosodium glutamate (MSG)?

There is no MSG in our chorizo.

Are your products gluten free?

Yes, all of our current products are gluten free. There are no cereal products in the chorizo. The production lines are dedicated to their respective products and there is no incidental wheat present in or on the lines that produce them.

What exactly are chipotles?

Chipotles are jalapeño peppers that have been dried and smoked. Our chipotle flavored cheeses have a slightly smoky taste with just a hint of heat.

Can I use V&V Supremo® Sour Creams for cooking?

Our sour creams are excellent for items like soups and sauces, as they behave like crème fraiche and will not curdle or “break”.

What is the best way to store leftover opened cheese?

Remove cheese from its package, and place in plastic storage bags, or other containers that feature re-closable seals or lids. Push as much air out as possible, seal completely, and place in refrigerator. If you want to maximize shelf life and practice strict sanitation procedures, push the bag inside out with your hand, pick up the cheese through the bag, retract bag and seal as above.

Are your cheeses appropriate for cheese trays, or serving “as is”?

Absolutely. We recommend removing the cheese from the refrigerator for 15-20 minutes before serving for maximum flavor. Place the cheese on clean platters, that have not been exposed to other foods. (If, for example raw onions were on the surface of the platter previously, the cheese would pick up the onion flavor.)
