    Preheat oven to 375°F

    In a bowl; combine butter, oil, garlic, lemon, honey, salt, and pepper. Microwave for 30 seconds or until butter is melted. Whisk in parsley and set aside until needed.

    Place 2 rubber spatulas on each side of the potatoes; cut thin slices of the potato crosswise using the spatulas as a guide to make sure that the bottom of the potatoes remain intact.

    Place scored potatoes in a baking dish and brush with the butter mixture. Make sure to brush inside the slits of the potatoes. Save some for basting. Cover with foil and bake potatoes for 45 minutes.

    While the potatoes are baking; combine sour cream, lemon juice, green onion, parsley, pepper, and salt in a small bowl. Stir to combine and set aside until needed.

    Remove potatoes from the oven. Using a spoon, gently open each slit to baste with remaining oil. Sprinkle Cotija cheese in between the slits. Place potatoes back in the oven uncovered and continue to bake for 15 minutes.
