    In a bowl combine, tomato, onion, serrano pepper, cilantro, lime juice, 1/8 tsp. salt, and 1/8 tsp. pepper. Set aside.

    Preheat a pan over medium heat for 1 minute. Cook bacon until crisp, 5 to 6 minutes. Drain on paper towels. Remove some of the fat. Add chicken to the skillet with bacon fat and season with the rest of the salt and the pepper. Cook chicken for 6 minutes or until browned. Crumble bacon into bite size pieces, and add back into the skillet, mix in with the chicken. Divide the preparation into 2 portions. Set aside.

    Preheat a skillet or pan for 1 minute over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts.

    Heat tortilla for 30 seconds on one side, flip and add ¼ cup of Chihuahua® cheese, add chicken, bacon, and about 3 Tbsp. pico de gallo, add ¼ cup of cheese, top with the other tortilla and cook for about 2 minutes or until golden brown. Flip occasionally with spatula so they don’t burn. Repeat with remaining ingredients. Cut into quarters; serve and enjoy!
