Chorizo Quesadillas with Poblano Peppers

In this quesadilla the intense flavor of the roasted poblano pepper and the spicy flavor of the chorizo wrapped with the melted cheese. It's what makes these quesadilla something really delicious!

Ingredients

4 flour tortillas
1 cup Chihuahua® Brand Quesadilla Style Cheese, Shredded From V&V SUPREMO®
½ pkg. (12 oz.) Supremo® Brand Pork Chorizo From V&V SUPREMO®
1 large poblano pepper, roasted, peeled and sliced

Directions

  1. Place skillet over medium heat. Remove plastic casing from chorizo, place in skillet and cook for 10-12 minutes, breaking up with a spoon.

  2. Place another skillet over medium heat for 1 minute. Warm up tortillas for 30 seconds on one side. Flip tortilla over and add ¼ cup of cheese to each tortilla. When cheese is partially melted, add ¼ of the cooked chorizo ¼ of the poblano pepper.

  3. Fold tortilla in half. Cook for about 2 minutes on each side, until cheese is fully melted, and serve.
