Chilaca chiles, or fresh pasillas are often found in Michoacán, and vary greatly in heat level.  Even when quite hot, however, their complex roasted green chile flavor comes through and provides a unique touch to dishes such as the following.


4 Chilaca chiles, roasted, peeled, diced
1 ½ cups Queso Fresco From V&V SUPREMO®, crumbled
1 small onion, diced
2 Tbsp. Sierra® Brand Cotija Style Cheese grated From V&V SUPREMO®
¼ cup epazote, chopped
½ Tbsp lime juice
1 tomato, diced
¼ cup cilantro, chopped
salt to taste
tortilla chips


  1. Combine first 6 ingredients in a bowl. Mix well, add salt to taste.

  2. Mound about 1½ teaspoons of mixture on each chip.

  3. Top with chopped tomato and cilantro.
