2 Tbsp. fresh lemon juice

1/8 tsp. fresh ground black pepper

¼ tsp salt

1/8 hot sauce

1Wash zucchini, cut the ends off and discard. Use a vegetable peeler to shave the zucchini lengthwise into long wide ribbons.

2Continue making ribbons until you reach seeds. Rotate zucchini and continue to shave into ribbons. Discard the cores of the zucchini.

3In a small bowl, whisk together lemon juice, salt, pepper, and hot sauce. Whisk in olive oil. Mix until everything is well combined.

4Place the ribbons in a medium bowl.

5Separate the zucchini ribbons, add onion, tomato, Cotija Cheese, basil, and mix gently.

6Whisk dressing again, add into the salad, mix to coat well.

7Portion salad into 4 bowls. Top with shaved Sierra® Brand Cotija Cheese and toasted pine nuts.
