    Boil 1 ½ quarts of water and add salt to taste. Add pasta to pot of boiling water and cook for 9 minutes. Strain when done. Set aside.

    Preheat a 3-quart sauté pan for 5 min. on low heat. Add in chorizo links and cook for 5 minutes with lid on. Remove lid and continue to cook chorizo for 15 minutes (rotate links every 5 minutes for even cooking).

    Remove cooked chorizo links from pan and cut each chorizo link on a bias into 4 pieces and reserve. Keep the oil from the chorizo in the pan (The chorizo oil will be used for sautéing remaining ingredients).

    Raise the heat on the pan to med- high. Add in sliced red bell pepper and sauté for 2-3 minutes. Add in sun dried tomato, garlic. Continue to sauté for 1 minute.

    Stir in sour cream, cooked pasta, salt, and pepper; stir and let warm for 1 minute on low heat.

    Add in Cotija cheese and parsley. Stir well to incorporate all ingredients evenly. Serve warm with chorizo on top and enjoy!
