This masa creation is available throughout Mexico, although variations in shapes and fillings do occur according to region. The recipe below is a hearty and satisfying way to spice up a party or begin an everyday meal.

 

Ingredients


 

1 Pkg. V&V SUPREMO® SOPES

 

1 Pkg. V&V SUPREMO®  BEEF or PORK CHORIZO, cooked (see “Cooking V&V SUPREMO CHORIZO”)

 

15 oz. V&V SUPREMO® CREMA SUPREMO® or V&V SUPREMO® CREMA *RANCHERITO® sour cream

 

15 oz. V&V SUPREMO® QUESO FRESCO or V&V SUPREMO® QUESO *RANCHERITO®, crumbled

 

1 head of lettuce, sliced

 

1 medium tomato, diced

 

½ cup cilantro, chopped

 

2 cups refried beans

 

vegetable oil for frying

 

Preparation

 

  1. Pour 1/2 inch of oil in a large skillet over medium heat for about 3½ - 4 minutes or  it until reaches a temperature of 350 to 375 degrees. Place as many sopes in pan as will fit in single layer. Fry on one side for 1½ minutes, flip and fry other side. Repeat with the rest of the sopes.
  2. In meanwhile, place a medium pan over medium heat. Add beans and stir constantly ( add bean broth or water if they are too thick). Keep them hot.
  3. Place fried sopes on paper towels to drain excess of oil. Line plates with lettuce leaves. Top each sope with 1½ Tbsp. beans, 2 Tbsp. cooked chorizo, ½ Tbsp cheese.

 

 

 

SERVING: Top each sope with chopped cilantro and tomato and sour cream
