Chorizo Quesadillas with Poblano Peppers

This is a classic combination for quesadillas-melted cheese, spicy chorizo and green chiles.




4 flour tortillas


1 cup V&V SUPREMO® CHIHUAHUA® cheese, shredded


1/2 pkg. (12 oz) V&V SUPREMO® PORK or BEEF CHORIZO, cooked (See  “Cooking V&V SUPREMO® CHORIZO”)


1 large poblano chile, roasted, peeled, cleaned and diced (see “Preparing Poblano Chiles”)




  1. Place skillet over medium heat. Remove plastic casing from chorizo, place in skillet and cook for 10-12 minutes, breaking up with a spoon.
  2. While chorizo is cooking, place another skillet over medium heat for 1 minute. Warm up tortillas for 30 seconds on each side.
  3. Add ¼ cup of cheese to each tortilla. When cheese is partially melted, add ¼ of the poblano pepper and ¼ of the cooked chorizo.
  4. Fold tortilla in half. Cook for about 2 minutes on each side, until cheese is fully melted, and serve.
