Burritos Norteños

If you’re eating flour tortillas in Mexico you’re probably in the North, which is where the inspiration for this dish comes from. These one piece meals are actually quite easy to prepare, especially if you substitute canned refried beans for homemade.

 

Ingredients


 

4-10 Inch flour tortillas

 

1 cup refried beans

 

15oz. Package V&V SUPREMO® PORK OR BEEF CHORIZO, cooked (see “Cooking V&V SUPREMO® CHORIZO”)

 

2 cups V&V SUPREMO® CHIHUAHUA® cheese, shredded

 

½ cup V&V SUPREMO® CREMA SUPREMO® or V&V SUPREMO® CREMA *RANCHERITO® sour cream

 

½ head iceberg lettuce, sliced

 

¾ cup pico de gallo (see recipe)

 

Preparation

 

  1. Place beans in saucepan over medium heat. Stir often. Keep warm. 
  2. Place a large non-stick pan or griddle over medium heat. Heat the tortillas for 30 seconds on each side (Tortillas should be heated just enough to soften them.)
  3. Spread ¼ part of the beans on the lower half of tortilla. Add the same amount of cooked chorizo, sour cream, lettuce, cheese and pico de gallo.
  4. Fold-up both sides of the tortilla and roll the front towards the back.
  5. Place burrito seam side down back in skillet over low heat for 2 minutes.

 

 

SERVING: serve warm
