    In a large bowl; combine yellow squash, zucchini, red peppers, red onion, garlic, 1 tablespoon olive oil, salt, and pepper. Toss to evenly coat vegetables.

    Brush cast-iron grill pan with remaining ½ tablespoon oil and preheat for 3 minutes over medium-high heat. Grill vegetables for 1 to 2 minutes on each side or until lightly charred. Let vegetables cool for 3 to 5 minutes, cut grilled vegetables into 1-inch chunks, and toss together. Set aside until needed.

    Place huaraches on an oven-safe tray, bake for 1 to 2 minutes, flip huaraches, and bake for an additional 1 to 2 minutes or until huaraches are lightly warmed and softened.

    Remove huaraches from oven and evenly top each with ½ cup Chihuahua® cheese. Bake for 8 to 9 minutes, or until cheese is melted and golden.

    Divide grilled vegetable mixure evenly to top baked huaraches. Garnish each Grilled Vegetable Huarache with 2 tablespoons grated Cotija cheese, serve, and enjoy!
