    In a shallow dish; combine cinnamon and 2 tablespoons sugar, mix until well combined. Set aside until needed.

    In a food processor; combine Chihuahua® Cheese, Queso Fresco Cheese, Sour Cream, vanilla, and remaining ½ tablespoon sugar. Process for 3 to 4 minutes, open processor and scrape down sides with a rubber spatula. Process for an additional 30 seconds to 1 minute.

    Spread each tortilla with 1 tablespoon cheese mixture, add 1 guava slice, and spread an additional tablespoon of cheese mixture on top of the guava slice. Fold sides of tortilla toward the center and tightly roll tortilla from the bottom up.

    Preheat oil in a heavy-bottom pan for 2 to 3 minutes or until oil reaches 350°F. Working in batches, fry the chimichangas for 1 to 2 minutes on each side or until golden brown. Drain chimichangas on a plate or tray lined with paper towel.

    Roll Guava Chimichangas in cinnamon sugar. Serve and enjoy!
