Avocados are not just for guacamole. This delicious combination of textures and flavor proves it. Enjoy this amazing Chilled avocado soup.

Ingredients

2 ripe, medium sized avocados (Hass variety), peeled, pitted
1 small seedless cucumber, with peele, chopped
½ cilantro, chopped
1 cup fresh spinach, chopped
3 Tbsp. lime juice
1 jalapeño pepper, chopped
4 green onions, chopped
2 cups cold water
1 cup Supremo® Brand Crema Mexican Style Sour Cream From V&V SUPREMO®
1 cup pico de gallo, (see recipe)
salt to taste

Directions

  1. Place the first 8 ingredients in blender. Blend well.

  2. Place the puree into a bowl and whisk in sour cream. Whisk in salt to taste.

  3. Chilled the soup in the fridge for at least 2 hours before serving.
