CHORIZO QUESADILLAS WITH POBLANO PEPPERS
Ingredients
4 flour tortillas
4 oz. Shredded Chihuahua® Quesadilla Cheese from V&V SUPREMO®
6 oz. Supremo® Pork Chorizo from V&V SUPREMO®, cooked
1 large poblano chile, roasted, peeled, cleaned and diced
salsa verde for serving, if desired
Method of Preparation
- Place skillet over medium heat. Remove plastic casing from chorizo, place in skillet and cook for 10-12 minutes, breaking up with a spoon.
- While chorizo is cooking, place another skillet over medium heat for 1 minute. Warm up tortillas for 30 seconds on each side.
- Add 1 oz. of cheese to each tortilla. When cheese is partially melted, add ¼ of the poblano pepper and ¼ of the cooked chorizo.
- Fold tortilla in half. Cook for about 2 minutes on each side, until cheese is fully melted. Cut quesadilla in half and serve with salsa verde, if desired.
