Ingredients

4 flour tortillas
4 oz. Shredded Chihuahua® Quesadilla Cheese from V&V SUPREMO®
6 oz. Supremo® Pork Chorizo from V&V SUPREMO®, cooked
1 large poblano chile, roasted, peeled, cleaned and diced
salsa verde for serving, if desired

Method of Preparation

  1. Place skillet over medium heat. Remove plastic casing from chorizo, place in skillet and cook for 10-12 minutes, breaking up with a spoon.
  2. While chorizo is cooking, place another skillet over medium heat for 1 minute. Warm up tortillas for 30 seconds on each side.
  3. Add 1 oz. of cheese to each tortilla. When cheese is partially melted, add ¼ of the poblano pepper and ¼ of the cooked chorizo.
  4. Fold tortilla in half. Cook for about 2 minutes on each side, until cheese is fully melted. Cut quesadilla in half and serve with salsa verde, if desired.
