Method of Preparation

  1. Finely chop one scallion.
  2. Grill the remaining two scallions.
  3. Whisk the eggs and previously chopped scallion together in a small bowl.
  4. Preheat a non-stick skillet over medium heat for 1 minute. Add butter-when melted, add chorizo. Stir for 30 seconds.
  5. Add the egg mixture to the skillet. Cook, stirring occasionally, until eggs are set to your liking.
  6. Serve with grilled scallions, warm tortillas, and salsa on the side.
