MARINARA SAUCE WITH COTIJA

Ingredients

1 Tbsp. olive oil
6 large cloves garlic, minced
1/8 tsp. red pepper flakes
1 oz. , 28 oz. can Whole Italian tomatoes with basil, blended
1/2 tsp. dried oregano
1/2 tsp. fresh rosemary, chopped
1/4 tsp. ground black pepper
1 tsp. sugar
1/2 tsp. kosher salt
4 eaves fresh basil
4 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®

Method of Preparation

  1. Heat oil in medium saucepan over medium heat. Add garlic and cook, stirring for 2 minutes. Add pepper flakes and cook for 1 minute. Add tomatoes, oregano, rosemary, black pepper, sugar, and kosher salt.
  2. Cook, stirring occasionally, for 15-20 minutes. Stir in basil, and remove from heat. Divide into 4 portions and ladle into serving bowls. Top each portion with 1 oz. Cotija.
