Potato Casserole with Chorizo and Beef

   Preheat oven to 375°F. Spray 8-inch baking dish with cooking spray. Set aside.

   For mashed potatoes: In a medium pot, combine water, butter, ½ tsp. salt, heat to boil, remove from heat. Stir in sour cream, and potatoes and let stand until moist. Set aside.

   Preheat a medium skillet over medium heat for 1 minute. Cook chorizo for 10 minutes. Remove from the skillet and set aside. In the same skillet, add onion, sauté for 30 seconds, mix in garlic and sauté for 30 seconds more. Add ground beef, season with salt and pepper. Break meat up while cooking and cook for 5 minutes stirring frequently. Mix in tomato paste, add chorizo back to the skillet, add in green & red peppers, corn; continue to cook for 1 minute.

   Spread 1½ cups of mashed potatoes into the baking dish. Add meat mixture and distribute over the potatoes and carefully spread the rest of the mashed potatoes over the meat. Top potatoes with Chihuahua® cheese. Place in the oven and bake for 15 minutes. Remove from the oven and let cool for 5 minutes. Serve and enjoy!
