For the dressing: Place the berries in a saucepan; pour the sugar onto the berries. Mash. Bring to a boil over medium heat and cook for 4 minutes, stirring continuously. Push berries through a fine mesh strainer into a small bowl. Whisk in the sour cream and set aside or place in the fridge until using.

For the cheese: Preheat a nonstick skillet or a griddle over medium heat for 2 minutes. Cut the Cotija wedge in half lengthwise, place the two halves in the skillet and sear each side for 30 seconds. When done, cut each slice lengthwise, then into small cubes.

For the salad: In a large bowl, combine the spring mix lettuce with raspberries, tomatoes, toasted almonds, and Sierra® Cotija Cheese. Pour the dressing over the salad, toss gently, serve and enjoy!
