    Preheat a large skillet for 2 minutes over medium heat. Heat vegetable oil for 1 minute. Add garlic and ginger. Cook for 15 to 20 seconds, stirring constantly. Add bell pepper, carrot, and peapods. Cook for 2 minutes, stirring constantly. Add green onion, sesame oil, soy sauce, sriracha sauce, and almonds. Cook for and additional 20 seconds.

    Preheat a skillet or pan for 1 minute over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts. Warm a tortilla for 30 seconds on one side, flip tortilla, add ¼ cup Chihuahua® Cheese and 2 tablespoons vegetable mixture, fold tortilla in half. Cook for 1 to 2 minutes on each side or until lightly browned.

    Move quesadillas to the side of the skillet. Sprinkle 1 teaspoon Cotija Cheese onto skillet. Immediately place quesadilla on top of the cheese and press quesadilla into melting cheese with the spatula. Cook for 30 seconds to 1 minute or until cheese coating is lightly browned. Repeat process for other side of quesadilla. Repeat steps 2 and 3 for the remaining tortillas.
