    Strain beans and reserve the broth.

    Place beans in a saucepan over medium heat. Mash beans with potato masher. Add half of the bean broth.

    Add ground ancho chile, sour cream and cheese. Continue to mash and stir until the mixture is creamy. If it’s too dry, add more bean broth. Add salt to taste.

    Place beans in a serving bowl, and garnish with fresh cheese and cilantro.
