    Cheese: Using a box grater on the "extra coarse" side, rub the cheese against the grater over a bowl. Set aside.

    Vinaigrette: In a small bowl or small jar with a lid, add red wine vinegar, olive oil, honey, garlic, black pepper, and salt. Shake for a few seconds until well combined.

    In a medium bowl, add chickpeas, cucumber, cherry tomatoes, red onion, basil, and Cotija cheese. Drizzle in vinaigrette and gently fold ingredients together until well combined.
