Ingredients

1 (4.5 oz.) wedge Sierra® Brand Cotija Cheese from V&V SUPREMO®

3 Tbsp. red wine vinegar

2 Tbsp. olive oil

1 Tbsp. honey
-
½ tsp. garlic, minced
-
½ tsp. ground black pepper
-
¼ + ⅛ tsp. kosher salt
-
1 (15.5 oz.) can chickpeas, rinsed, drained

1 cup cucumber, diced in small cubes

1 cup cherry tomatoes, quartered
-
¼ cup red onion, finely diced
-
¼ cup fresh basil, cut into thin strips
4 Steps to complete

1Cheese: Using a box grater on the "extra coarse" side, rub the cheese against the grater over a bowl. Set aside.

2Vinaigrette: In a small bowl or small jar with a lid, add red wine vinegar, olive oil, honey, garlic, black pepper, and salt. Shake for a few seconds until well combined.

3In a medium bowl, add chickpeas, cucumber, cherry tomatoes, red onion, basil, and Cotija cheese. Drizzle in vinaigrette and gently fold ingredients together until well combined.

4Serve or refrigerate salad for an hour before serving. Enjoy!
