Chimichurri is one of the most delicious and versatile sauces around. Give our recipe a try; It’s a must with empanadas, grilled meats, or as a marinade.
Ingredients

2 Tbsp. red wine vinegar

2 cloves garlic, finely chopped

1 cup cilantro leaves, firmly packed

1 cup parsley leaves, firmly packed

½ tsp. kosher salt or to taste

¾ tsp. red pepper flakes
-
½ cup avocado oil
-
¼ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
2 Steps to complete

1In a food processor or blender, combine all of the ingredients except avocado oil. Process until smooth. Slowly add the avocado oil in a thin steady stream while food the processor is running. Blend until slightly thickened.

2Taste sauce and season with additional salt and pepper as desired. Pour sauce into a bowl; add Cotija Cheese and mix well until combined. Let stand for at least 20 minutes before serving. Enjoy!
Notes
You can put everything in a food processor, blender, or finely chop the herbs and mix everything.
