1 link from (14 oz.) Supremo® Brand Pork Chorizo from V&V SUPREMO®

11 oz. frozen sliced ripe plantains

3 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
-
12 flour tortillas (6 inch)

4 Tbsp. Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
½ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
8 Steps to complete

1Preheat a medium skillet over medium heat for 1 minute. Add chorizo break it apart and cook for 9 minutes, stirring occasionally.

2In the meantime, thaw plantains in the microwave then slice them in half, lengthwise.

3Preheat a skillet or griddle for one minute.

4Heat the slices for 5 minutes, just enough time so they develop a caramelized crust and become a little bit firmer.

5Remove the plantains from the griddle, cut into small pieces and add into to the cooked chorizo.

6Mix in Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®.

7Lower the griddle temperature to medium-low heat. It is important that the griddle temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts. Heat tortillas for 30 seconds on one side, flip tortillas. Add to each ¼ cup Shredded Chihuahua® Cheese and 2 Tbsp. of the chorizo and plantain mixture.

8Fold tortillas in half and cook until cheese melts and the quesadillas are golden brown on both sides, flipping when necessary. Repeat with remaining tortillas. Serve quesadillas with Supremo® Brand Mexican Sour Cream from V&V SUPREMO® Enjoy!
