Vermicelli Soup “Fideo”

   Preheat medium sized pot on medium heat for 2 minutes. Add oil and sauté onion for 2 minutes. Break vermicelli noodles into the pot and fry until lightly browned, about 2 minutes.

   Stir in tomato sauce, chicken broth, garlic powder, and salt. Bring to a boil, add cilantro with stems (do not separate stems). Lower heat to med-low and cover the pot. Cook for 8 minutes on a simmer.

   Remove cilantro and onion before serving. Serve and garnish with crumbled Queso Fresco and sour cream, enjoy!
