    Melt butter in a large saucepan over medium heat. Add onion and cook for 3 minutes. Add garlic, and cook for 1 more minute. Add flour. Cook for 4-5 minutes or until golden brown, stirring constantly.

    Add broth slowly to pan, stirring constantly. Add Serrano pepper and bring to boil. Turn off the heat.

    Place chopped cilantro and the broth mixture in the blender. Remove centerpiece of lid from blender and cover with clean dish towel to avoid pressure from hot liquid. Blend well.

    Return mixture to saucepan over medium heat, add sour cream and simmer for about 5 minutes. Turn off the heat and add salt to taste.

    Ladle soup into bowls and garnish with cheese, tomatoes, cilantro sprigs and croutons. Enjoy!
