    Fill a large pot with 6 cups of water over high heat and bring up to boil; add 2 Tbsp. of salt add green beans and cook for about 5 minutes, the beans should still be crisp.

    Drain beans and transfer to a bowl with ice water to stop the cooking process. Drain again.

    In a large bowl whisk together lime juice, salt, black pepper and red pepper flakes. Gradually add olive oil while whisking. Add onion and marinate for 15 minutes.

    Add the cooked cooled green beans, red bell pepper, and toss. Fold in 1 cup of Sierra® Brand Cotija Cheese From V&V SUPREMO®
