    Preheat a griddle with the grill marks up for 2 minutes over high heat.

    Grill the pineapple slices, ham and onions for 1 minute each side. Dice the ham, pineapple and combine with the grilled onion. Divide mixture in half and set aside.

    On the same griddle heat tortillas. Turn the heat to medium- low and heat tortillas for 15 seconds on one side, flip and add ¼ cup of cheese, half of the ham mixture, add ¼ cup of cheese, top with the other tortilla, press down, and cook for about 2 minutes until the cheese has melted and tortillas have the grilling marks. Flip occasionally so they don’t burn. Repeat with remaining ingredients. Serve and enjoy!
