Wing Dipping Sauce

    Preheat oven to 325°F.

    Dipping Sauce: In a small bowl, combine sour cream, scallion, kosher salt, black pepper, lemon juice, Cotija cheese, and dill. Mix until well combined. Refrigerate until ready to serve.

    In a medium bowl, combine Cotija cheese, parsley, and garlic powder. Mix well and set aside.

    Place wings in a medium bowl along with grapeseed oil, garlic, ¼ cup lemon juice, kosher salt, black pepper, rosemary, thyme, oregano, and baking powder. Mix thoroughly until wings are well coated.

    Place wings (spaced-out evenly) on a rack atop a sheet tray and place in the oven for 20 minutes. Raise oven temperature to 425°F and continue to cook wings for 10 min. Remove from oven and, using a brush, evenly coat the wings with 2 Tbsp. of fresh lemon juice. Let cool for 1 minute.
