Nopal (Cactus) Quesadilla

   In a medium bowl, add nopales, red onion, tomato, cilantro, jalapeño pepper, oregano, olive oil, lime juice, salt, and pepper. Mix until well combined.

   Preheat a skillet for 1 minute over medium-low heat. The temperature on the skillet is important so that the tortillas do not harden or overcook before the cheese fully melts.

   Warm the tortillas in the skillet for 1 minute on one side, then flip them. On one tortilla, add ¼ cup of V&V Supremo® Chihuahua® Brand Cheese or V&V Supremo® Shredded Mexican 3 Cheese Blend, followed by half of the nopal mixture. Top with another ¼ cup of cheese, then cover with a second tortilla and press gently with a spatula. Flip occasionally until the quesadilla is golden brown on both sides and the cheese has melted. Repeat with the remaining tortillas and nopal mixture. Serve and enjoy!
