½ cup jarred nopales, drained, rinsed, pat dry and diced

¼ cup red onion, chopped

1 roma tomato, de-seeded & chopped
-
2 Tbsp. cilantro, chopped
-
¼ tsp. jalapeño pepper, chopped
-
1/8 tsp. dried oregano
-
½ tsp. olive oil
-
½ tsp. lime juice
-
1/8 tsp. ground black pepper
-
1/8 tsp. kosher salt
-
4 corn tortillas
-
1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
3 Steps to complete

1In a medium bowl add nopales, red onion, tomato, cilantro, jalapeño pepper, oregano, olive oil, lime juice, salt, and pepper. Mix until well combined.

2Preheat a skillet for 1 minute over medium-low heat. The temperature on the skillet is important so that the tortillas do not harden or overcook before the cheese fully melts.

3Warm tortillas for 1 minute on one side, flip and add ¼ cup of cheese on one of the tortillas, add half of the nopal mixture, add ¼ cup cheese over the mixture, top with another tortilla and press gently with a spatula. Flip occasionally until quesadillas are golden brown on each side and cheese has melted. Serve and enjoy!
