Vegetarian tacos are one of the most delicious ways to eat vegetables! With just a few simple ingredients and Chihuahua® Cheese this colorful taco recipe is packed with flavor in each bite, here’s how to make it!
Ingredients

1 Tbsp. vegetable oil

½ cup white onion, medium dice

¼ cup poblano pepper, medium dice

¼ cup red bell pepper, medium dice
-
½ cup chayote squash, medium dice
-
½ cup calabacita squash, medium quarter slices

½ cup frozen fire roasted corn
-
½ tsp. garlic powder, heaping
-
½ tsp. kosher salt, heaping
-
¼ tsp. ground black pepper
-
⅛ tsp. Mexican oregano, crushed
-
1 tsp. fresh lime juice
-
6 (6-inch) corn tortillas

1 (7.06 oz.) pkg. Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®

4 Steps to complete

1Preheat oil in a cast iron skillet for 2 minutes over medium heat. Add onion and sauté for 1 minute. Add poblano pepper, bell pepper, chayote. Cook for 3 to 4 minutes. Add calabacita and continue to cook for 2 to 3 minutes. Mix in corn, garlic powder, salt, pepper, and oregano. Cook for an additional 1 to 2 minutes. Turn off heat and mix in lime juice. Divide vegetable mixture into 6 equal portions and keep warm until needed.

2Preheat a nonstick griddle or comal for 2 minutes over medium heat. Warm tortillas for 1 minute on each side. Top with ¼ cup Chihuahua® Cheese and allow cheese to melt for 30 seconds to 1 minute.

3Fill each warmed tortilla with 1 portion vegetables, and sprinkle with more Chihuahua cheese. Serve with lime wedges. Enjoy!
