Grilled Caribe® Cheese Soup is a uniquely flavored vegetarian soup that is hearty & satisfying. Creamy vegetable soup is finished with spicy poblano peppers and deliciously grilled Caribe® cheese.

    Preheat a skillet or nonstick griddle for 2 minutes over medium high heat. Slice Caribe® cheese into 8 strips. Sear cheese for 30 seconds on each side. Remove cheese from heat, let cool for 5 minutes and dice into medium cubes. Set aside until needed.

    Preheat oil in a medium pot for 1 minute over medium-high heat. Sauté onion for 1 minute. Add garlic and cook for 30 seconds. Add potatoes, cover the pot and cook for 8 minutes. Add poblano peppers, salt, black pepper, sour cream, vegetable broth, give ot a good stir, bring to a boil. Cover, reduce heat to medium-low and simmer for 8-10 minutes, or until potatoes are tender.

    Add grilled Caribe® cheese to the soup and simmer for 1 to minute or until cheese is warmed through.

    Serve Grilled Caribe Cheese Soup garnished with chopped cilantro. Enjoy!
