    Creamy Horseradish Sauce: in a small bowl; whisk together all ingredients until thoroughly combined. Cover and refrigerate until needed.

    Cauliflower Chi-Wa-Waffles: place cauliflower in large food processor. Process on high speed for 30 seconds to 1 minute, or until no large chunks of cauliflower remain.

    In a medium bowl; combine processed cauliflower, egg, 1½ cups Cotija cheese, garlic powder, onion powder, white pepper, and flour. Stir together until a thick and even batter is formed.

    Pre-heat a waffle iron on medium heat; place 1 tablespoon Cotija cheese in the center of the iron. Top with ¼ cup batter, ¼ cup shredded Chihuahua® cheese, an additional ¼ cup batter, and an additional tablespoon Cotija cheese. Close waffle iron and cook for 5 to 6 minutes or until waffles are golden brown.

    Serve hot waffles immediately with creamy horseradish sauce and garnish with chives. Cook’s Note: Cauliflower Chi-Wa-Waffles can also be served with maple syrup instead of creamy horseradish sauce.
