Cheesy Caramelized Onion Dip is a delicious party appetizer that is perfect for pregame tailgating. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®, Shredded Mexican 3-Cheese Blend from V&V SUPREMO®, and sliced Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO® are combined with sweet onions for an irresistible dip you’ll want to make again and again.
Ingredients
-  4 Tbsp. unsalted butter
-  1 large yellow onion, thin half-moon slices
-  2 cloves garlic, crushed
-  ¼ cup beer
-  ½ tsp. dry thyme
-  ½ tsp. ground black pepper
-  ½ tsp. Kosher salt
-  ½ cup unsalted beef stock
-  ¾ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
-  1 (7.06 oz.) pkg. Shredded Mexican 3 Cheese Blend from V&V SUPREMO®
-  5 slices Sliced Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
-  1 Tbsp. flat parsley, rough chop

- 1Pre-heat a cast iron skillet for 3 minutes over medium-high heat. Melt butter. Add onion, garlic, beer, thyme, black pepper, salt, and cook for 15 to 18 minutes until onions are tender and well-browned.
- 2Add beef stock and stir in for 1 minute. Add Sour Cream and simmer for 2 to 3 minutes, stirring occasionally, or until sauce is slightly thickened.
- 3Pre-heat broiler to 500°F.
- 4Add 3 Cheese Blend, cook for 2 to 3 minutes, stirring constantly until cheese is completely melted and dip is slightly thickened.
- 5Top onion dip with Chihuahua® Cheese and broil for 30 seconds to 1 minute or until cheese is melted and bubbly.
- 6Remove from oven, cool for 5 minutes. Garnish with parsley and serve the Cheesy Caramelized Onion Dip with bread, crostini, chips, and enjoy.
