    In a medium bowl; combine tomato, onion, cilantro, serrano pepper, lime juice, salt, and pepper. Mix until all ingredients are fully incorporated. Cover and refrigerate Pico de Gallo until needed.

    Heat 1 tablespoon oil in a medium skillet for 2 minutes over medium heat. Add onion and sauté for 1 minute. Add garlic and sauté for 30 seconds. Mix in shredded chicken, tomato, salt, and pepper; cook for 2 minutes or until chicken is warmed through. Transfer chicken to a bowl and stir in shredded Chihuahua® Cheese.

    Fill each tortilla with 3 to 4 tablespoons cheesy chicken mixture. Tightly roll up each tortilla and secure with toothpicks

    Heat remaining ½ cup oil in a heavy-bottom skillet for 2 to 3 minutes over medium heat. Fry taquitos in batches for 2 to 5 minutes, turning occasionally, or until golden brown and crisp. Transfer fried taquitos to a paper towel-lined plate or tray.

    Remove toothpicks and serve Cheesy Chicken Taquitos topped with Sour Cream, Pico de Gallo, and crumbled Queso Fresco. Serve and enjoy!
