    Preheat a medium pot for 1 minute over medium heat; add chorizo and cook for 3 minutes while crumbling chorizo with a spoon. Add onion and garlic, cook for 1 minute, add ground beef, salt, black pepper, garlic powder, and cook for 3 minutes while crumbling ground beef with a spoon.

    Add potatoes, carrots, cover, and cook for 3 minutes.

    Add tomato sauce, tomato paste, vegetable stock, bay leaf, frozen peas, and cilantro. Cover, reduce heat to low, and simmer for 5 minutes or until potatoes are tender.

    Remove cilantro and bay leaf. Serve Chorizo & Ground Beef Stew with sour cream, and enjoy!
