Fall is just around the corner, and the fresh flavor of our Shrimp Sincronizadas will help you savor the last few days of summer. Marinated shrimp is smothered with delicious melted Chihuahua® Cheese from V&V Supremo® and served with fresh avocado pico de gallo.

    In a medium bowl; combine all ingredients for pico the gallo and gently toss until well mixed. Cover and refrigerate until needed.

    Preheat a heavy-bottom skillet with olive oil for 2 minutes over medium heat. Add onion, garlic, and jalapeño. Sauté for 1 minute, add tomato, and continue to cook for additional 1 minute. Add shrimp, lime juice, salt, black pepper, and cilantro. Increase heat to medium-high and cook for 1 to 2 minutes. Divide shrimp mixture into 4 equal portions and keep warm until needed.

    Preheat a griddle or comal for 1 minute over medium heat. Reduce heat to medium-low, warm 2 tortillas for 15 seconds on each side. Top one tortilla with ⅓ cup Chihuahua® cheese, 1 portion shrimp filling, top shrimp with ⅓ cup Chihuahua® Cheese. Top with the other tortilla, lightly press down, and cook for 2 to 3 minutes or until the cheese has melted and tortillas are golden brown. Flip occasionally to prevent burning. Repeat with remaining ingredients.
