Egg White Breakfast Quesadilla are a tasty combination of egg whites, fresh vegetables, and shredded Chihuahua® Quesadilla Cheese. This easy breakfast on-the-go will give you the energy you need to enjoy the day.

    In a small bowl; whisk together egg whites, Cotija Cheese, and divide into 4 equal portions. Set aside until needed.

    Pre-heat a non-stick skillet for 2 minutes over medium heat. Melt ¼ tablespoon butter, add red onion, garlic, and sauté for 2 minutes. Add green and red bell pepper, and sauté for an additional minute or until peppers are slightly tender. Divide into four equal portions and set aside until needed.

    Using the same pan from step 2, add ¼ tablespoon butter. Evenly pour 1 portion egg white mixture into pan, add 1 portion vegetable mixture and ¼ cup Chihuahua® Cheese. Cook for 1 to 2 minutes, or until egg white is fully cooked and cheese is melted. Remove from heat and set aside until needed.

    Using the same pan, heat up a single tortilla. Add another ¼ cup of Shredded Chihuahua® cheese onto the tortilla and top with 1 omelette poriton. Fold the quesadilla allowing the tortilla to brown evenly.

    Repeat steps 3 & 4 to prepare remaining quesadillas. Serve Egg White Breakfast Quesadillas hot and enjoy!
