Prepare to enter the world of true Mexican flavors. Huitlacoche is a form of mushroom that grows on the corn cob. This corn truffle is considered to be a gourmet delicacy.
Ingredients

1 Tbsp. unsalted butter

5 large cloves garlic, minced

½ serrano pepper, minced
-
2 2 green onions, minced
-
2 roma tomatoes, seeded, diced
-
⅓ cup frozen corn kernels, (thawed)

1 poblano pepper, roasted, diced
-
½ (7 oz.) can Huitlacoche, (corn mushroom)
-
salt to taste
-
12 corn tortillas

6 Steps to complete

1Place a saucepan over medium heat for one minute. Add butter. When butter melts, add garlic and Serrano pepper. Cook, stirring for 1 minute.

2Add onions, corn, tomatoes, poblano peppers, and mix well.

3Add huitlacoche. Salt to taste. Mix again and cook for 1 minute. Turn off the heat and set aside.

4Place a large skillet or griddle over medium heat. Warm the tortillas for 30 seconds on each side.

5Add ¼ cup of cheese and 1 Tbsp. of the huitlacoche mixture on each tortilla.

6Fold tortillas in half and cook until cheese is melted and tortillas are browned. Enjoy!
