    Place a saucepan over medium heat for one minute. Add butter. When butter melts, add garlic and Serrano pepper. Cook, stirring for 1 minute.

    Add onions, corn, tomatoes, poblano peppers, and mix well.

    Add huitlacoche. Salt to taste. Mix again and cook for 1 minute. Turn off the heat and set aside.

    Place a large skillet or griddle over medium heat. Warm the tortillas for 30 seconds on each side.

    Add ¼ cup of cheese and 1 Tbsp. of the huitlacoche mixture on each tortilla.

    Fold tortillas in half and cook until cheese is melted and tortillas are browned. Enjoy!
