The term “refried” is somewhat of a misnomer, since in Spanish “refrito” is closer to “well-fried”.  At any rate this is a classic side dish and fundamental for making tacos, tostadas, sopes, tortas, etc.

    Place a medium thick-bottomed pan (preferably) over medium heat for 1 minute. Add oil. Add jalapeño and onions. Cook, stirring until lightly brown about 3 minutes. Add garlic-cook for 1 minute. Remove jalapeño (if desired).

    Add beans and mash with a potato masher to a coarse puree. Add enough bean broth to make them a bit soupy, since they will thicken. Add salt to taste.
