Two Cheese Waffles with Chipotle Dipping Sauce

   Chipotle Dipping Sauce: In a small bowl, combine sour cream, chipotle salsa, and salt. Mix until well combined and set aside.

   Cheese: Cut Caribe cheese into 4 quarters, stand up each piece and cut each quarter in half to make 8 pieces.

   Pre-heat waffle iron until it reaches a medium-high heat.

   Place 1 slice of Caribe cheese in each quadrant of the waffle maker. Top with 1 Tbsp. of Cotija cheese. Top with another slice of Caribe cheese. Close lid and cook for 4 minutes.

   When ready remove cheese with tongs and place on cutting board. Allow the cheese to slightly cool and cut each cheese waffle into fourths.

   Serve and enjoy with chipotle dipping sauce.
