Father’s Day is the day that dad gets to eat whatever he wants. Rather than a plain burger, we’ve got a Bacon Wrapped Burger Roll Covered in a thin crispy bacon layer that infuses the meat with flavor along with the chorizo. No bun needed, just add your favorite side!

    Preheat oven to 375˚F

    Preheat a medium skillet for 1 minute over medium heat. Remove the plastic casing from Chorizo and cook for 1 to 2 minutes, crumbling with a spoon while cooking. Add onion and continue to cook for 3 to 4 minutes. Remove from heat and set aside until needed.

    In a large bowl, mix ground beef, egg, bread crumbs, Cotija cheese, salt, pepper. Mix until well combined.

    Place the meat mixture on a medium baking tray lined with wax paper and evenly flatten into a thin layer. Add 1 cup of the 2 Cheese Blend and evenly distribute across meat. Add chorizo, spinach, and remaining cheese. Carefully roll the meat lengthwise to form a log.

    On a large piece of wax paper, lay the 10 slices of bacon side by side. Place the meat loaf on top of the bacon. Roll up, wrapping the meat with the bacon. Carefully place the roll in a (9-inch x 13-inch) baking dish, with the ends of the bacon under the meat loaf. Bake for 45 minutes or until meat reaches an internal temperature of 160°F. Turn broiler on high heat. Broil for 4 to 5 minutes more until the bacon is crisp.
