    Pre-heat oven to 400°F.

    Dice Chihuahua® Cheese into ½-inch cubes and set aside until needed.

    Pre-heat a large non-stick skillet for 2 minutes over medium heat. Remove chorizo from plastic casing, cook for 7 to 8 minutes, crumbling with a spoon while cooking. Add butter and cook for 30 seconds or until butter melts. Add onion, poblano pepper, garlic, and sauté for 2 minutes or until vegetables begin to soften.

    Add flour and stir constantly until flour is completely absorbed. Stir in beef stock, bring to a boil over medium-high heat, reduce heat to medium-low, and cover. Simmer for 15 to 17 minutes, stirring occasionally, until gravy is smooth and slightly thickened.

    Transfer fries to a large baking pan or dish, add half of the diced Chihuahua cheese, pour gravy over fries, and top with remaining Chihuahua cheese. Bake fries for 15 to 17 minutes or until the cheese is melted. Garnish Cajun Gravy Fries with scallions and enjoy!
