    Boil Beans: in a large pot; add 4 quarts water, rinsed beans, ½ onion, and 2 garlic cloves. Cover, bring to a boil over medium-high heat, reduce heat to medium, and simmer for 1 hour or until beans are tender.

    Add salt, olive oil, epazote herbs, cover, and simmer for 20 minutes. Remove garlic, onion, epazote herbs, and discard.

    Chorizo mixture: preheat a skillet over medium heat for 1 minute. Add chorizo and cook for 5 minutes, remove chorizo from the skillet, and set aside.

    Using the same skillet; add diced onion, crushed garlic, and sauté for 1 minute. Add serrano pepper and cook for 30 seconds. Add bacon, cook for 3 minutes, add ham and continue to cook for 1 minute. Add tomato, cilantro, and cook for 30 seconds. Add pre-cooked chorizo back to the skillet, and stir until all ingredients are fully incorporated.

    Add chorizo mixture to beans, cover pot, and simmer for 5 to 7 minutes to allow the flavors to combine. Garnish with cilantro, onion, lime wedges, serve, and enjoy!
