Cilantro goes from being a complementary ingredient to being the main ingredient! Its attractive color and flavor make this soup a palatable delight!
Ingredients
-  3 Tbsp. butter, unsalted
-  1 small onion, chopped
-  1 large clove garlic, minced
-  3 Tbsp. all-purpose flour
-  4 cups chicken broth
-  1 small serrano pepper, chopped (optional)
-  1 cup cilantro, chopped
-  1 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
-  1 cup V&V SUPREMO® Brand Queso Fresco Cheese, cut in small cubes
-  4 plum tomatoes, diced
-  croutons
5 Steps to complete
- 1Melt butter in a large saucepan over medium heat. Add onion and cook for 3 minutes. Add garlic, and cook for 1 more minute. Add flour. Cook for 4-5 minutes or until golden brown, stirring constantly.
- 2Add broth slowly to pan, stirring constantly. Add Serrano pepper and bring to boil. Turn off the heat.
- 3Place chopped cilantro and the broth mixture in the blender. Remove centerpiece of lid from blender and cover with clean dish towel to avoid pressure from hot liquid. Blend well.
- 4Return mixture to saucepan over medium heat, add sour cream and simmer for about 5 minutes. Turn off the heat and add salt to taste.
- 5Ladle soup into bowls and garnish with cheese, tomatoes, cilantro sprigs and croutons. Enjoy!
