Preheat a skillet over medium heat for 1 minute.

Add olive oil and heat for 1 minute. Add onions and sauté for 1 minute, mix in ham and cook for 1 minute. Add tomato and spinach and cook for 30 seconds.

1. Preheat a skillet or pan for 1 minute over medium-low heat. The temperature of the skillet is important so that the tortillas do not harden or overcook before the cheese fully melts. Heat 2 tortillas at a time for 30 seconds on one side. Flip tortillas and add ¼ cup of cheese to one of the tortillas and half of the ham mixture. Add ¼ cup of cheese on top of the mixture, cover with the other tortilla. Cook the quesadilla for 2 more minutes, flipping it occasionally until the cheese melts. Repeat this step with the mixture for the other 2 tortillas. Cut into wedges, serve and enjoy!
