    Preheat a medium saucepan over medium heat for 1 minute. Add oil. Heat for 1 minute

    Add onion and sauté for 1 minute, add garlic and cook for 30 seconds. Add tomatoes, salt, cumin, mix and cook for 2 minutes, stirring occasionally.

    Add kale, chipotle sauce, black pepper, mix again and cook for 2 minutes.

    Meanwhile preheat a skillet or pan for 1 minute over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts.

    Turn off the heat from the saucepan, Stir in Grated Sierra® Brand Cotija Cheese and set aside.

    Warm tortillas for 1 minute on one side. Flip tortillas and add ¼ cup Shredded Chihuahua® Quesadilla Cheese and 2 Tbsp. kale mixture.

    Fold tortillas in half, and cook for 2 minutes or until cheese melts, and quesadillas are golden brown. Flip occasionally with spatula so they don’t burn
