One-Pot Beef Stroganoff

Ingredients

½ lb. top sirloin, cut into ½” cubes

1 Tbsp. vegetable oil
-
½ + ⅛ tsp. & ¼ tsp. kosher salt (separated)

½ tsp. black pepper (divided in half)
-
2 Tbsp. unsalted butter
-
2 cups baby bellas mushrooms, sliced “⅛” inch
-
¼ cup white onion, small dice
-
1 tsp. garlic, minced
-
½ tsp. dried thyme leaves
-
½ tsp. dried oregano
-
2 Tbsp. cup red wine
-
1½ Tbsp. all-purpose flour
-
2 cups unsalted beef stock
-
1 Tbsp. Dijon mustard
-
3 oz. (1½ cups) uncooked wide egg noodles

1/3 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

1 Tbsp. parsley, chopped
6 Steps to complete

1Add ¼ tsp. salt and ¼ tsp. black pepper to cubes of sirloin and mix thoroughly.

2Add oil to medium pan and pre-heat on high heat for 2 minutes.

3Add in seasoned beef and cook for 2 minutes or until beef browns on sides. Remove beef from pan onto a small plate and set aside.

4Using the same pan, reduce heat to medium, add butter and let it melt. Add mushrooms, ½ + ⅛ tsp. salt and ¼ tsp. black pepper. Cook for 1 minute.

5Add onion, garlic, thyme, and oregano. Cook for 1 minute. Add wine and stir. Allow wine to reduce for 30 seconds to 1 minute.

6Sprinkle flour into the pan and combine with the mixture. Add in beef stock and mustard, then bring to a boil (approx. 1 minute) and add in egg noddles. Stir and cover pan with lid while reducing boil to a simmer. Simmer mixture for 8 minutes. Remove lid and stir in beef and sour cream. Let warm for 1 minute. Stir in parsley. Serve and enjoy!
