    Add ¼ tsp. salt and ¼ tsp. black pepper to cubes of sirloin and mix thoroughly.

    Add oil to medium pan and pre-heat on high heat for 2 minutes.

    Add in seasoned beef and cook for 2 minutes or until beef browns on sides. Remove beef from pan onto a small plate and set aside.

    Using the same pan, reduce heat to medium, add butter and let it melt. Add mushrooms, ½ + ⅛ tsp. salt and ¼ tsp. black pepper. Cook for 1 minute.

    Add onion, garlic, thyme, and oregano. Cook for 1 minute. Add wine and stir. Allow wine to reduce for 30 seconds to 1 minute.

    Sprinkle flour into the pan and combine with the mixture. Add in beef stock and mustard, then bring to a boil (approx. 1 minute) and add in egg noddles. Stir and cover pan with lid while reducing boil to a simmer. Simmer mixture for 8 minutes. Remove lid and stir in beef and sour cream. Let warm for 1 minute. Stir in parsley. Serve and enjoy!
