If you like plantains, you have to try this recipe! We are sure you’ll love ripe plantains with chorizo and cheese!
Ingredients

1 (14 oz.) pkg. Supremo® Brand Pork from V&V SUPREMO®

1½ cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
-
15 oz. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

1 cup onion, diced
-
½ cup raisins
-
½ cup tomato sauce
-
3 large ripe plantains
-
vegetable oil for frying
9 Steps to complete

1Preheat oven to 400°F.

2Preheat a skillet over medium heat for 1 minute. Add chorizo, and cook for 10 to 12 minutes, breaking up the meat with a spoon.

3Add onions and sauté for 3 more minutes.

4Add tomato sauce and raisins. Cook for 3 more minutes. Remove from heat and set aside.

5Cut ends off plantains and peel.

6Cut plantains in half widthwise; cut both pieces in half lengthwise. Scoop out a little of the plantain flesh with a small metal spoon.

7Place skillet over medium heat. Pour in oil to a level of ½ inch. Wait for the oil to shimmer or till it reaches 350-375°F, approximately 4 to 5 minutes. (Be cautious when frying.)

8Fry plantains in oil just until golden brown, turning with tongs when necessary. Place plantains on paper towels to drain. Repeat the process with the rest of the plantains.

9Place plantains on a sheet tray cut side up. Top plantains with chorizo mixture, and cheese. Bake for 12-15 minutes, or until cheese is fully melted. Serve plantains, and drizzle sour cream. Enjoy!
