This masa creation is available throughout Mexico, although variations in shapes and fillings do occur according to region. The recipe below is a hearty and satisfying way to spice up a party or begin an everyday meal.
Ingredients
- 1 package Corn Sopes from V&V SUPREMO®
- 14 oz. package Supremo® Brand Pork or Beef Chorizo from V&V SUPREMO®, cooked
- 15 oz. Supremo® Brand or Chihuahua® Brand Mexican Sour Cream from V&V SUPREMO®
- 15 oz. Queso Fresco Cheese from V&V SUPREMO®, crumbled
- 2 cups lettuce, chopped
- 1 medium tomato, diced
- ½ cup cilantro, chopped
- 2 cups refried beans
- vegetable oil for frying
4 Steps to complete
- 1Pour ½ inch of oil in a large skillet over medium heat for about 3½ -4 minutes or until it reaches a temperature of 350 to 375°F. Place as many sopes in pan as will fit in single layer. Fry on one side for 1½ minutes, flip and fry other side. Repeat with the rest of the sopes. Place fried sopes on paper towels to drain excess of oil. Set aside.
- 2Preheat a medium skillet over medium heat for 1 minute. Remove the plastic casing from the Chorizo and cook for 10-12 minutes, breaking up while cooking.
- 3Place a medium pan over medium heat. Add beans and stir constantly (add bean broth or water if they are too thick). Keep them hot.
- 4Fill each sope with 1½ Tbsp. beans, 2 Tbsp. cooked chorizo. Top with lettuce, chopped cilantro, tomato, sour cream, and cheese. Enjoy!
