Two Cheese Muffins – Cheese cornmeal muffins with Chihuahua and Cotija cheese.
They go great with just about everything, easy to make!

    Preheat oven to 400°F. Coat a 12-cup muffin pan with cooking spray.

    In large bowl, mix together cornmeal, flour, sugar, baking powder and salt.

    Add eggs one at a time and beat with large spoon. Whisk in Supremo® Brand Mexican Sour Cream and butter.

    Mix in 1½ cups Shredded Chihuahua® Brand Quesadilla Cheese and Grated Sierra® Brand Cotija Cheese mix until everything is combined.

    Spoon mixture into muffin pan, filling each cup ¼ inch from top. Sprinkle the remaining Chihuahua® cheese on top of each muffin.

    Place in oven and bake for 20-25 minutes, or until tops have turned golden brown.

    Remove from oven. Let muffins rest in pan for 10 minutes. Serve hot or at room temperature.
