Two Cheese Muffins – Cheese cornmeal muffins with Chihuahua and Cotija cheese.
They go great with just about everything, easy to make!
Ingredients

1½ cups yellow cornmeal

½ cup all-purpose flour
-
6 Tbsp. granulated sugar

1 Tbsp. baking powder
-
½ tsp. salt
-
3 large eggs
-
15 oz. Supremo® Brand Mexican Sour Cream
-
1/3 cup unsalted butter, melted
-
2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO® (reserve ½ cup for topping)

1 cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®

1Preheat oven to 400°F. Coat a 12-cup muffin pan with cooking spray.

2In large bowl, mix together cornmeal, flour, sugar, baking powder and salt.

3Add eggs one at a time and beat with large spoon. Whisk in Supremo® Brand Mexican Sour Cream and butter.

4Mix in 1½ cups Shredded Chihuahua® Brand Quesadilla Cheese and Grated Sierra® Brand Cotija Cheese mix until everything is combined.

5Spoon mixture into muffin pan, filling each cup ¼ inch from top. Sprinkle the remaining Chihuahua® cheese on top of each muffin.

6Place in oven and bake for 20-25 minutes, or until tops have turned golden brown.

7Remove from oven. Let muffins rest in pan for 10 minutes. Serve hot or at room temperature.
